IIRC, the more you get caught the higher your infamy gets. You can't do some quests or get blessings in a church (to cure disease) if your infamy is too high. It's better to actually be stealthy then to bum rush it like you are doing now. Getting the armor from joining the Dark Brotherhood will help a lot to make you more sneaky, which is good as that's argueably the best armor you'll get until your teens unless you kill Umbra.
Even if you aren't caught, your infamy will slowly rise. Just your general reputation, I guess.
Also: your infamy, in general, raises much faster than your fame. Or, that's my observation. Suddar fucked around with this message on 03-29-2006 at 11:00 PM.

Because fame only rises through quest completions.
And infamy you can rack up by the dozen with a few poor decisions.

Put on metal underwear and lock it tight. That'll help prevent some of the anal rape-age anyway (rapage?).
Now, for an honest tip... try your best to focus on one, and kill em from range.
It's a pain, but standing and fighting is a good way to get your ass handed to you that fight. If your character uses Blunt/Blades, get a two hander (Claymore for Swords, Battle Axe/Warhammer for Blunt, I suggest Warhammer, slightly longer range) and run backwards and swing at them from a distance. That, or pull out ye olde bow and arrow, or some long range damage magic, and nail em with that.
Even better, if you have some Destruction magic that hits an area, the three prisoners typically stay bunched up, fry them with that.
Last but not least, heal, fatigue, magicka, and shield potions can also really help in this fight. I would suggest at least having several potions that restore magicka to cast more heal spells if needed, and shield potions are extremely helpful as well, and shouldn't be hard to come by if you have Apprentice Alchemy skill. Also, if you can cast/have a potion of Fortify Agility, I suggest using them too.
Oh, and while you're at it, see if you can get some Silence poisons. They're really handy in the last few Arena fights.

You know you can just go to the console and type showclassmenu for the class menu again, then adjust your stats (if you want to) with player.setav skill value, right? There's probably a race/sign menu command too. That would save you some time.

My suggestion :
Do the missing brothers quest and opt for the good reward.
Talk to Renault in Chorrol and get the quest to find his impersonator. Go find his brother and the brother will return to Chorrol. Go to Chorrol and get the quest to clear the ogres from the farm. Clear them, take the brothers there, and head back to the grey mare. When you leave the gray mare, a thieves guild-ish guy will ask you to recover a treasure from ogres in a cave nearby. Get the treasure (Sword of Chorrol thingy) and turn it in to the Countess to get a shield that reflects 20% of all damage done to you. Which means the argonians that mob you, will be hurting themselves while they rape you. Which makes quite a few fights much easier.

I'm not against them in that I don't care if other people use them, but I have two "issues" with mods:
1) I'm not into cheat codes and the like--I prefer to play games, not build them
2) Security--I rarely install non-commercial software on my comp

1) Most mods aren't "cheat codes". While some are basically the same thing, most mods are used to expand upon the game, improve it, or balance it. The sneak/marksman mods I mentioned earlier make a light character viable, maybe even still a little underpowered compared to a heavy character.
Some mods even fix bugs. The Better Water mod actually fixes an issue that many users have with water reflection. I used the mod mentioned here to prevent my skills from breaking again. Though I hadn't cheated, I managed to have several of my skills broken in a way that they wouldn't increase. I had to use the console to manually reset all my skills and change them back. This mods prevents this issue, and would have saved me an hour of my time.
2) Quite frankly, you're at a greater risk installing commercial software than Oblivion mods. Oblivion uses it's own format, .esd files. All these files do is run code in the game that's already there. There's nothing that would fuck up your machine in these mods, and you can even view the code in them yourself if you wanted to do so. You'd be at a greater risk of fucking up your machine by installing a Starforce game by installing mods.
*shrugs* Your call though. Seems like you're detracting from your game experience for some pointless fear.

They don't actually break.
Some quests increase some of your skills by a certain amount. These skill rewards are halfway bugged. You essentially get the skill bonus as if you had used a cheat code to boost your skills.
In otherwords, it's an artificial boost persay. You'll get the +1 or 2, or so skill points to your skill, but the skill's actual exp bar doesn't move. So while you'll have, say 55 Acrobatics, and 50% of the way to 56 Acrobatics, when you do a quest that increases your Acrobatics by one, you'll have 56 Acrobatics, but you'll actually have the same amount of skill exp that you had before the skill increase.
It's weird, it's complicated, but by no means are your skills truly "stuck". The game just doesn't show the exp bar for that skill until you get it back up to it's current rank.

Please don't tell me how I should enjoy myself; it really annoys me. If a game sucks, I simply don't play it--I've got too many other options and too many other things to do as opposed to wasting my time with either cheat codes or game mods. As for security, you said it yourself: to be sure, one should verify the code personally. Why should I waste my time doing that just so I can cheat--or "rebalance" if you prefer--at a videogame? As I said, I'm quite selective about what I install on my computer.

In the northeast portion of the country, north-by-northwest of a small hour-glass shaped lake is Azsura's shrine. Do her quest (Again, level 10) and you get her star.. a rechargable soul gem that holds up to grand souls (Anything below humans).
On that note, anyone figured out how to use the black soul gem creators scattered about? It mentions it in the mage guild line of quests, but damn..

Place a Grand Soul Gem on the necromancer pedestal, then cast a Dispell spell upon the pedestal.
Note, that it also has to have the moonlight glow upon it as well.
And Black Soul Gems are for evil characters btw. Allows you to trap human souls.
