Yes, technically there will be no Xenosaga. There's more to the series coming out, but the next set isn't gonna be called Xenosaga as it's the 'Gears section of story.

Populous would be really sweet if it got remade. Though the idea of putting a bunch of dudes into a shack to get more dudes was a little funky. The game was still sweet.
I'd love to see a remade Final Fantasy 7, and Tactics. I'm running through Tactics right now with a resolve to finally beath the damned game this time around. Man, now that I'm older and have a better grasp of the english language, I see how butchered some of the translations were. Seven was sweet, it could just use a graphical update, and possibly some new side quests.
A new Lemmings would be cool too. Outside of that I can't think of much else right now.

Castlevania: Symphony of the Night does not need to be remade, in my opinion. SotN is the ultimate side-scroller in existence. Even Dawn of Sorrow can only rival it, not beat it. I cannot think in the slightest of anything that may be needed to improve it, with the possible exception of the voice acting. Given that no other side-scroller of any worth had full voice acting, I do not think that counts as a point against it.
Also, I honestly think DoS is a slightly better game. Not by much at all, but it just beats it. Especially with the extra mode of the game. Julius mode (which brings back lovely memories of Castlevania III) is infinitely superior to Richter mode.
I think it's cleaner, the magic system makes it so you don't have to rely entirely on whatever weapons you are using, because lets face it. The ONLY magic that's worth using in combat in SotN is Soul Steal and that's just when you're too cheap to buy potions. SotN beats out DoS with soundtrack and characters, but I think DoS has it beat with story and gameplay, and that's what's most important in a game I think.
A new TA would be pretty sweet too.
It is this downright awesome arcade game where (Best played this way at least) you have two players, one at the steering wheel and one gun, the other operating the other gun.
You drive through a city dodging obstacles and bad guys while laying down an endless stream of bullets to take out bad guys and their cars and various projectiles thrown at you from barrels off trucks to time bombs on your hood. Gotta catch the main bad guy in and cripple his car before your car is too wrecked to continue.
Man, I hate the fourth boss in that game, guy is driving a Gasoline tanker and keeps laying down streams of burning gas behind him as he jags back and forth from lane to lane, heh. Even single player the game is awesome

There is no reason whatsoever for a graphical upgrade for SotN. They use a ton of SotN sprites in Dawn of Sorrow and they all look great. That's including Alucard's sprite.
With the top screen map and status screen, SotN would be amazing on DS. I'm not thinking about quality, I'm thinking utility.
PSX games have a much higher resolution than the NES and SNES games that get ported to the GBA. And the DS has the same screen sizes as the GBA. Or close enough that it doesn't matter. For SotN to be ported to the DS's screen resolution, it would have to be graphically overhauled. This means that things would change in both how it is played, and how it looks. Even if it wasn't fit to a widescreen format for the PSP, it would support a resolution high enough so that the game would look exactly the same.
I guess the only thing that we'll agree on is that if SotN is ever re-released, it needs to be finished, first.
