SWG just put Jedi on an impossible pedestal which skewed the game like a black hole warps spacetime, then did half-ass "repairs" to try and remedy their cosmic error.
It's entirely possible to have Jedi without things going to hell.

One of the things established by the prequels, based on comments from the original movies, and reinforced time and again by the EU, is that Jedi are perfectly capable of being taken out by non-Jedi. Yes they do have special powers, yes it does give them an edge if they're allowed to choose the scenario, but let's be honest here; all the main characters you see in the novels and so forth are just that: MAIN CHARACTERS. The protagonist of most stories has some quality or trait that sets them apart. Qui-Gonn, Obi-Wan, Mace, Yoda...all masters, Anakin supposedly had more mojo than the rest, Luke is some prophesied badass, the Emperor was the embodiment of the dark side. The protagonist in KOTOR was the former dark lord of the Sith, the protagonist of KOTOR 2 recovers from having the Force abandon him. None of these people are "average" characters. They're all extraordinary.
There's a reason the numbers of Jedi in KOTOR (thousands) gets cut down to so few by the movie era and it has little to do with all the badasses sucking up the good mojo.

It is true that Jedi are killed in the movies and the EU, but that does not dimish their, excuse the term, "überness". If we look at the occasions were Jedi were overpowered by "mundanes" successfully, we see that one of four things happened:
a) They were outnumbered so badly it didn't matter anymore how good they were (Clone Wars, Sith Wars)
b) The were completly taken by surprise (Order 66)
c) Things were utterly beyond their control (orbital bombardment, gas attacks)
or
d) They were taken out by exceptional mundane adversaries that possess "character shields", almost as good as you accuse the Jedi characters of having. (Boba Fett, General Grievous, Aurra Sing)

And yeah, the combat for Jade Empire would be perfect for an online game. Well, you couldn't really use your focus to slow down time but make your attacks more powerful.
