Actually, 32 bit is fine right up til 3.25gb where a 32 bit OS will just stop addressing.

There are a lot of kibbles and bits scattered between the different versions, and ultimate has them all.
Over home premium specifically, ultimate has remote desktop, a feature to restore previous versions of a given file built into the shell (like System Restore was in XP except for individual files as well), a "fax and scan" client, and a drive encryption tool called BitLocker that wasn't even included in the business editions.
I've used precisely none of these features.
OH and in ultimate you can set an .avi as your desktop.

Wrong. If you want to be pedantic about it, 32-bit OS's have a 4 gigabyte linear address space, but some of this gets chewed up by memory-mapped I/O (for stuff like graphics cards). Thus, you end up with anywhere from 3 to 3.75gb of linear address space left for RAM.
Strangely enough, the XP install I've got on my machine at work only shows 2gb, despite having 8gb installed... hence the questions about 64-bit Vistas.
