Here's one from the books:

Coconut Macaroons

Ingredients:
50g almond meal
50g unsweetened coconut
1 tsp vanilla essence
2 egg whites
1/2 cup sugar

Procedure:
Preheat oven to 150 C. Mix almond meal, coconut and vanilla essence in a large bowl. Separately, beat egg whites until stiff, then fold into dry ingredients and mix thoroughly. Place teaspoonfuls of mixture onto a greased tray. Bake for 25 minutes until lightly browned.

Makes about 15. 44 calories per macaroon, 1.2 g protein, 1.5 g carbs, 3.7 g fat, 1 g fiber. An interesting snack.

Good luck, it's rather hard to get perfectly right... Sometimes it tastes okay, sometimes it tastes simply divine. Haven't found what exactly makes it best... Adding onions is good too... And if it's too spicy, cream cheese does wonder to milden it.

Sauce.

Though now that you mention it I might have to try baking them with the chicken as well.

Going to serve it over this imported rice I have. It’s all simmering etc now I'll post the picture of the finished product latter. None of my local stores had the various spices ended up getting them on eBay. So far it all smells good and the sauce isn’t too spicy for me.


And the whole thing on a bed of rice.

Was tasty, but the Coliander made me a bit ill, next time I wont use it.
