The guide book doesn't help much at all. It doesn't really go much into WM mode.
Basically, once you get to a certain level, and then beat a certains tage, you can unlock the extra chapters. One of them has all the Soul Edge (Complete)s. The other has all of the ultimate weapons. You have to be in the 'Edgemaster' title levels (Like Lv. 72+)to get the soul edge chapter open.
I'm still trying to find where you buy all the gag weapons! Apparently there is one stage I haven't been to that I can see, which probably unlocks the last subsection that sells you the gag weapons.

I have (I think) all the "normal" extra characters unlocked.
I have the third outfit for Nightmare (Sigfried lives!), and most of the extra weapons I've been able to buy in WM mode. I won a couple there too, but they later turned up on the list to buy as well.
I have yet to see extra costumes for Link and a few others, and I was wondering about the more unusual weapons too. As well as unlocking Berserker, Lizardman, and Assasin. However, it sounds like it just might be a matter of getting the right level now.
There are a couple of areas that I couldn't connect to in my first run through WM mode. Am I to take it that they open up in the second run through?
SC2 actually locked up on me while fighting her once... the ruble motor in my controller went crazy and this rather annoying tone came out of my speakers until I power cycled my 'Cube...

The new weapons sometimes have different effects, but they mainly look different. Who needs chicks in chainmail when you can have Sophitia in her alternate costume? ... drool...

WM mode is a mode where you follow a storyline that takes you through several a shitload of battles. Often, these battles will have different fighting conditions, or different conditions for victory. You can allways go back and repeat a battle after you've finished it, but you have to win at least once to move on to the next.
As you go through the battles and progress along the storyline, you gain EXP and gold. The gold you can use to buy things from a list it gives you, and the EXP appearantly decides what's on the list (and a couple other things). Basically, the higher level you are, the more you can buy. Also, after you clear WM mode the first time, it adds extra (and much tougher) missions on for you to go back and try.
Things you can buy mostly include extra weapons, and some extra outfits. You sometimes win such things just by clearing a certan area as well. I've also unlocked some characters and some battle areas that way.
Now, as for the weapons... They all look a bit different. Most of them will have their offence and defence tweeked a bit. But you also have to watch for other changes. Some are longer or shorter than the standard weapon, changing the reach of the attacks. Others allow damage through even when an attack is blocked, or do damage even when blocked. Some do a constant health drain or health regain, others do it based on when you swing or hit. And, everyone has a "joke" weapon that's less effective than all the others. Some of the joke weapons look fairly normal, but the description tells you what's wrong with it, others are clearly not intended to be used as a weapon.

It's called Deathmatch. The pretense is, it's one-hit K.O.s, so it's more like a duel of timing and tactics. You basically get only a split second to decide your move and carry it out, and then if you happen to miss your opponent, or get blocked, you must quickly change tactics to get the first hit. If not, your opponent will hit you and it's all over.
I used Nightmare at first and got up to the 16th round. Then I was using Mitsurugi for a bit, and actually got up to the 40th round with him!
As you might expect, characters with long reach will excel at this mode. also, be wary that you cannot pause the game in this mode.
I've found it to be really fun, and you can sometimes get a nice adrenaline rush going.
No, I don't remember what unlocked it.
The Mistress' Justice move is the spiral tribute stance, then b b b.
There's a variation of it that does more hits, that's b ->b <-b ->b <-b... but I haven't been able to do it yet. I can do the first variation easily, but I'm not sure if the timing is the same or what with the second?

Khyron, those sword twirl moves as Raphael are incredibly useful. Some of them, like the one where he circles his sword forward after attacks and says "En Garde" are the setups to some wicked combos. It's the extra mission at Merope Monestary (iirc) in chapter 4. You have to beat five enemies before time runs out, and the catch is that each of them has some gimmick you have to work around (like high defenese, ultra fast, or whatever).
The third enemy is always Taki. She either blocks, evades, or parries 90% of the regular moves I try, interrupts unblockables and guard breakers, and escapes all throws. I wish I could say I'm exaggerating. There's obviously some trick to beating her, but...

That is, THE hardest mission in the entire game.
The ONLY way to beat it is to ring-out every single one of them. You begin each match at the spot on the stage where you ended the last one. So you have to lure the first fighter to the edge, ring them out. Then ring out the next immediately. Same with the next one, etc.

I ended up just having to use my mad skills to beat her. I figured that if she rolled out of the way of everything (including all my attempts to ring her out), I would push her to the edge of the stage, knock her down with 2K, then okizeme her. The two characters after that were pretty easy.
*shrug*
Anyway, I have 200% completion now. Hooray. Just gotta get more gold to finish buying the joke weapons.

On a side note, DO NOT USE AUTO EVADES ON FAST CHARACTERS. My friends and I played SC2 for hours the other night and one of them started using Talim. Auto evading her was a horrible idea and I immedietly stopped doing it. However, someone else used Mitsurugi and auto evade worked wonders for him. I ended the night with 107/7 so trust me on this one
Also; Raphael's frat parry (1A+B) will GI horizontal attacks without stopping Raphael. You can then hit B and do his 7 stab thing with little chance of blocking.
