Never had kangaroo jerky. Around here a lot of farmers who are finding their farms aren't growing things that sell (Tobacco being one of them) have started farming rare animals. There's a fish farm at the back of the farm behind us, for instance, and an emu farm up the road. It's weird what they make into jerky.

I've had the gator jerky, emu jerky, buffalo jerky, gator steaks, buffalo burger (which I don't recommend; it's probably good as steak, but ground into burger it's too strong-flavored), and ostrich breast (don't bother...it, predictably, is like turkey).

Odd, Buffalo that I have had has tended to taste like rather tough Beef..makes kinda odd steaks, very lean meat, but still tasted good. I imagine the stock they are rasienig near you came from stock they are useing in Montanna.
