Need For Speed 2 is decent, not as high graphicwise as the PS2 version, but certainly faster then the Xbox.
I'm sure there are some other new interesting ones coming out for the 'cube... Cant remember 'em all.

Anyway, as for gamecube. Try things like Animal Crossing, or get some friends together and do the SSBM thing.
Then of course next month is Metroid Prime.
A friend keeps telling me to try animal crossing, but what the heck kinda name is that? I know you should not judge games by their names... but that makes me wanna laugh!!

Looks a lot better, moves a lot smoother, upped frame rates, better detailing and texture work, four player support vs 2 player support.

PS2 has 4 player support IF and only IF you have a multitap. Most people dont

I don't concider having to buy an extra peripheral 4 player suppoort.
BUT, to clarify, It's playable with 4 players out of the box on NGC, PS2 requires Multi-Tap.
It's a LOT more playable on the NGC than the PS2 as well.. So if you already own in for PS2, and you really like it, it's worth trading the PS2 version in at like a GameStop for credit, and putting that twoards the NGC version.
Thats what I did. I don't own a MultiTap either though, and didnt feel like buying one, concidering the lack of 4 player games on PS2 it wasnt worth the cost when I could just upgrade G L, and just not get any more games on the PS2 if any should happen to come out that are 4 player on it, if the NGC gets em anyway.
