I take him down to the summon-Anima stage pretty quick, and try to get as many NullElement spells in the process, yet Anima beats down all my fucking aeons except for one, whoever I choose last.
When Anima goes down, all hell breaks loose. Seymour pwns my current Aeon with one spell, then my party hops back in. Usually Tidus, Auron and Yuna. He smacks two of em down with a multi-spell, for fucking 1800dmg a piece, then I try desperately to phoenix down/life the other two.
It always fails. I've lost six times now. Auron's my toughest tank, surprise, with 2200hp. He goes down in one Fire or Water spell at the end.
HEPL.
And I found all the Aeon's got killed fast by Anima.. It was useless to try, unless it's a Grand summon.
I dunno. Maybe you're too low level? I didn't have much difficulty at all.
One of my FFX boss tricks is to walk around in a random encounter area until I've built up all my character's limit breaks and then go into the boss fight and plaster it.
have yuna and tidus special option talk, SPECIALLY tidus
next round possible, tidus hastes either himself or yuna, yuna then proceeds to nulelement all the 4 elements
her job is to just nulelement till anima, you should have taken some time near a save sphere to beef up overdrives on yer aeons
then just overdrive the hell outta anima
and continue to easily beat seymour
with the hasted tidus/yuna nul element/lulu nuke with the jiggle tactic

He's just too fucking fast! Immune to Slow, and Haste doesn't even compare to him.
And Aeons are useful against Anima, gotta zerg rush him with all four, but he goes down with little heartache.

and the jiggle tactic, is doing so much damage with luls that at the end of battle she does her victory pose where she bends over and they jiggle! (this caused lulu to be my most used char)
If memory serves me correctly.. I think I heard that he can be poisoned. I'm probably wrong.
So, I deleted that game and now I'm starting over.

Get in fight w/seymour.
Haste up Yuna.
Summon Valefor to take care of Seymore and his two cronies.
Valefor loses fast to Anima. Bring in Shiva. She can heal hersef if needed by casting ice on herself. Use her ice strike until her overdrive is full, then kick Anima's ass. If anima actually gets a chance to overdrive, shield will prevent major damage.
Once Anima bites it, dismiss her, then have Yuna summon Ifrit. If Yuna has grand summon, then have her summon Ifrit, overdrive, then summon Shiva and overdrive. If Yuna doesn't have grand summon, then just use Ifrit to kick Seymour's ass.
I've done this method twice, and have only lost to Seymour in this battle ONCE.

I like to have a first strike weapon and use the free turn to cast hastega or slowga.

My Auron puts everyone to shame, but is slow as hell without Haste. 2200someodd hitpoints, hits for average of 650. This is with the rest of my party at 1000 - 1200hp, with hits of 10 (Yuna) to 350 (Kimahri).
I'm gonna start over tomorrow.
My rikku is freakin' buff, hits about as hard as wakka (ie. second place melee), uses those ub0r al behd potions, steals, has a weapon that sometimes petrifies, fast as hell...

I had like, 4 friend spheres by the time I reached that island place that had 'home'. I'm planning on using one to move Kimahri over to Auron's place once Kimahri finishes his sphere grid (Sadly, K is woefully underdeveloped in my game, as he can't even hit as hard as frikking RIKKU.
Maybe I just wasn't searching. Or I had enough sense to finish my grid in some sort of order.
As a general tip, don't use Key Spheres. Save them till you REALLY need to start unlocking stuff, or to access the occasional dead end as you pass it. This will lead you along each character's full area of the grid, and make sure that they can do what they are supposed to do. Odds are, Kimahri will be the first you need to unlock for. I suggest taking him to Auron's grid, via Tidus's section. (grab Haste on the way)
You want to beef up Tidus, Yuna and Auron.
You really dont need anyone else, As proved by my pwning my way though the game only useing them.
Summons are your best frend.

He is what you make of him. In my game, I've been turning him into a damage sink. If something big and nasty is about to hit for a crapload of HP, I put him out there. He has all the HP I can give him (so far), so I know I'll have him up to revive the others after they get hit. He hits pretty hard too.
Yuna, with the same spell as Lulu, can do about 2k more damage. Gotta love black magic spheres.
My characters end game:
Auron -- the best damn character I had. bout 4500 HP, and was the biggest damager bout 6000 a hit)
Wakka -- Second best, with his evade & Counter weapon, he would hit for 2500s
Tidus -- Tied with Wakka, he rocked for Hastega.
Rikku -- The character that literally make the last boss fight beatable for me. Mix > all
Yuna -- She was a great black magic caster, AND a great white magic caster. And then, there are her SUMMONS!
Lulu -- Ehhhhh...didnt excel too terribly much for me. She is nice and all, but didnt have as much magic skill as yuna, hers was about 15 points lower than Yuna
Kimahri -- Very multi-purpose. Mighty Guard (I believe thats what it is, the Blue magic that casts all 4 NulElement, protect, shell...) was used ALOT for his blue magic
Each character had their purpose for me.
I believe I beat that seymour with a party of Yuna, Tidus and Auron, though everyone DID swap into the fight for xp. If I remember correctly, thats one of the Seymour's that casts in an elemental pattern, though I forget the pattern.
And yes, im pretty sure ALL the seymours can be poisoned.
