Definitely brown bag lunches.
Bagels make a sandwich more interesting if you get bored with the same thing over and over.
If you are buying from a deli buy alot of 1/4lbs of meat instead of full lbs so you can get a bigger selection for your money, same for cheese.
Bagels are good for adding bulk and chewiness to a sandwich.
Slice hotdogs in half along the length, and put two of them in a sandwich (unless it's a really long hotdog and a really small sandwich). Apply condiments as desired.

Some things that are good in sandwiches:
meat:
Ham (black forest, off the bone)
montreal style smoked meat
roast beef
corned beef
bagged summer saussage (like salami, only dryer)
capacollo
roast chicken or turkey
Any kind of cheese, but notably:
Havarti
swiss
old (or "strong") cheddar
monterey jack (or pepperjack)
old nippy
creme cheese
and many other varieties
veggies:
Cucumber
NOT LETTUCE (cucumber does everything lettuce does, only better)
thinly sliced onion
tomato
etc...
Take whatever you have on hand, survey it and see what you feel will fit best together, and then start constructing your sandwich. I feel that it's best to always have SOMETHING (a veggie, cheese, or condiment) between meat layers, but you may feel otherwise.

What's the catch? Along with the Bacon (CRISPY), Lettuce and Tomato, put Mayonaisse and Peanut Butter on it.
I have no idea why this works.
Layer on foccacia bread, chevre on top. Pop it under the broiler for about 5 minutes, or the cheese gets all bubbly and golden. This is also yummy with diced up chicken!

You and I need to swap recipes. You seem to have a fine taste in cooking!
Anyway -- Something simple, but good for the effort:
Mix chicken or ham in the blender with a bit of mayo until you have a smooth paste, and spread that on your sandwich. Also works with eggs and mayo.
Other than that, try to stick with whole wheat bread. It's a lot better for you than white bread.
