I recommend Trigun, mainly becosue like, everyone has to see Trigun, its the law
and Ive bean wonderings for awhile whats everyones obsession with discount anime DVD, its by far the most expensive hk place and its not like their quality, selection or anything is any better then anywhere else, I recommend http://www. cookiejarvideo.com/ (had to add the space or else it claimed it was an html code , just remove it) same hks, but much cheaper, plus they dont lie claiming the retail price for an anime is 30*the number of legit DVDs when their selling bootlegs that cost retail (in hong kong) about 7 dalla per dvd
Also you must keep in mind some hks are better quality tan others, and they range from perfect to crappy video and unreadable poorly translated subtitles and distort audio, ill try to find the site with the reviews of the dvd quality, not sure where it is right now tough, sorry

If you want a less serious version that does not make much more sense, try Excel Saga. If that's not sugary enough, look up I Wanna Be An Angel.
For the dark and gothic, Ninja Scroll, Hellsing and Vampire Hunter D are hard to beat. Bastard! is also good, but mainly for presenting the lighter side of darkness.
Record of Lodoss War and Fushigi Yugi are the only real fantasy epics I know of. PRincess Mononoke feels epic because it's long and ambitious, but that's not a bad thing. Orphen is also good, if much less traditional.

I haven't seen it all and managed to forget it.

Tenchi (Universe and Muyo) (Good mix of Sci-Fi and comedy)
Another horribly short but hilarious show is Dragon-Half. Two episodes of fantasy mocking hilarity.
Slayers, Record of the Lodoss War, Love Hina, Trigun are all good animes ^.^
