Miyuki-chan in wonderland should be avoided at all costs.
The first time you watch it, you MUST be loopy due to lack of sleep, and it must be in a dimly lit room. At some ungodly hour at night works best.
Watch it like that, and you will understand it the first time. Watch it sober/awake/aware, and you won't have a clue what's going on. It's strange, and makes kinda strange plot jumps at some points.
However, the artwork in it is really, REALLY cool. They keep the colors somewhat subdued for most of it, so when they use alot, it really stands out.
For series, I recommend Blue Seed, Neon Genesis Evangelion, The Vision of Escaflowne and Trigun.

Oh yeah, Slayers: the Movie is pretty good, too. And make sure to check out the Cowboy Bebop move, "Knocking on Heaven's Door." I think you can only get it fansubbed, but it's still a great movie.

There's also another movie, but I've never seen it, sooo...
As anyone who pays attention to my rare animé posts probably knows, I highly recommend Big O. Giant robots, film noir, and North American artistic influence. Oo er!
Finally, once you've seen so much Japanese animation that it starts becoming predictable and formuliac, watch Project A-Ko
