Unfortunately, the Defiant was a necessary piece of machinery. Given that the Federation was nearly destroyed by one Borg Cube and the the Dominion gace the entire Alpha Quadrant a run for its money, I'd say a few-hundred Defiant-class ships are in order.

Thats why the White Star would win.
It's an Minbari ship after all, and ALL Minbari ships have a device called 'jammer', preventing any lock ons by enemy targeting computers.
(This was one of the main reasons earth was defeated so quickly by the Minbari in the EA/Minbari war.)
So unless Worf has learned a few new tricks with the manual targeting of the E/d the Enterprise is toast.

As for shielding, don't forget the Whitestar was a hybrid ship. Constucted using Minbari and Vorlon technology. Vorlon's were millions of years ahead of anything the star trek universe had short of Q and even the younger races of B5 had, including the minbari. The ships were organic and could absorb great deals of damage and repair themselves. I believe it was stated the whitestar could repeair itself up to 80 percent of it's damage. The biggest concern was if was under mass amounts of firepower of equiv. damage, then it was a matter of the damage vs. regeneration ratio. ie...if the mass amounts of damage were being wracked up greater then the regen capability. Depends on who's writing, JMS or the Deus ex Machina folks at Star Trek. Don't get me wrong, I loved Star Trek, but dang if every problem was not just solved by modifying the deflector array in new and exciting ways.
