DILEMA.
Seeing an endgame is a rare thing, to me. I'm too damned fickle. I always start doing something else before I finish.
It'd be hella shorter to make a list of what I HAVE beaten.
Some games that weren't so great to play through the SP were:
Unreal
Rune
Deus Ex
And I would almost say Serious Sam. It kinda teeters on the edge while playing single player. (It's more of a cooperative or multiplayer game.)

That's not to say that I haven't failed to beat many other games. It's just the only one that I can think of that I should go back and beat. The others were not worth the effort.

Added to thread topic: I could never defeat Robin Hood, Prince of Thieves for NES....that's about it.

That game needs a little redemption of it's own. Diablo in 3D. At least the dialogue/voice acting is good. I like how there are multiple endings, however.
It took me a while before i actually got into the game, since i started, but once i got into the game i finished it in a week or two (lots of powerleveling, too bad i didnt know i couldnt get past level 8 because of the exp cap)

I'm the same way
In my case though by the time I get back to the game I've forgotten where I was headed or what was going on in the story when I put it down, and then I just don't feel like starting over and figuring out what I was doing.

Exactly...by the time I'm in the mood to play it again, I feel like I need to restart the game 'cause I've been gone too long.
The only game I've not been able to beat, because of how hard it is, is the best platform game ever made. Shadow of the Beast. I only know 1 person who was able to beat it.
