But I'm not sure I've got all of the maps. There were only 3 at the WindHurst vendor: Bastok + surrounding and 2 other region + surroundings. Which ones do I need?

This is good to remember once you hit 18, and are around the Windurst area.
Selbina is one of the two places to go, to do your subjob quest. And It is supposidly the easier of the two.
