Ok, getting back to the issue at hand here. I think they call it photoshop because they're implying that it is a "shop" in which you work and not a "shoppe" where things are sold. This would be the most logical argument as most people associate "shoppe" with a storefront instead of a workshop.
I didn't know "shoppe" was used commonly enough to be associated with anything.
These words seem to come from a time when proper spelling was entirely subjective, and the more letters you could shove into a word, the smarter you looked.
