So perhaps it would be best to just observe the death, take the time, measure the height, and calculate the differences between ideal acceleration and observed acceleration.

No, no, only partial pinwheel. The natural response is to flail one's arms until you orient yourself in a familiar position; most often vertically, feet to the floor. But doing this, as opposed to falling in a horizontal position, severely decreases his resistance.
Then again, if we're using a building any way shy of a skyscraper I can't imagine these minute variables having more than a negligible affect on the outcome of his rate or length of descent. What would affect the outcome is his departure from the rooftop. If he were running or otherwise propelled, he would have more forward momentum and initial resistance to overcome before falling.
